200ml newly squeezed lemon juice
500g granulated sugar

For the Syrup: Put the listed items in a pot, bring to a light boil, mixing so the sugar melts. After that, take off the stove and leave to cool fully. Transfer into a clean bottle, seal and store in the fridge, where it will keep for about a month.

For the Premix: Pour every liquid ingredients into a large bottle, allow it to infuse for an hour, then strain best through a fine cloth, so it's perfectly clear.

To serve: Add 85ml from the batch mix into your stirring glass packed with ice, and agitate gently for one minute until cold. Filter to a chilled martini glass or similar, garnish with a few cranberries and complete it using a light spray of mandarin oil above the glass.
